I think i'm just going to swap back to the clutch fan off the water pump and see if it makes a difference. If it does, then I know what's going on. If it doesn't, then I have other issues.

The fan makes absolutely no differance at 70mph. You could take it off and not have one at all and it would likely run cooler on the highway. What it sounds like to me is either not enough radiator efficiency or the guage is just wrong.
As an answer to the Original question...I prefer mechanical fans because they have always worked better for me but when possible I run both, but neither one is causing you issues on the freeway.Ricky R

2 tales:
1. Capt America had horrible cooling issues during autox runs. This was fixed by replacing the electric pusher fan with a stock mechanical fan that included the shroud.
2. My stock 2.5 Impreza had overheating issues. Replaced the water pump, T-stat, belts, hoses, and head gaskets. The car would still overheat after about 20 minutes of sustained speed. I finally replaced the radiator because that was the only thing that was left. This fixed my problem.Charles

The radiator is not part of the problem, it's brand new, and it's higher quality/more rows than the stock unit.Originally posted by slowautoxr View Post2 tales:
